Description

A classic French green sauce, surprisingly simple to make and incredibly versatile. Perfect for almost any dish!


Ingredients

Units Scale
  • 1 cups (237 ml) Day-old Bread (crust removed)
  • 1/2 cup Olive Oil
  • 6 tbsp Spinach
  • 4 tbsp Parsley
  • 2 tbsp Dill
  • 2 tbsp Chives
  • 1 tbsp Tarragon
  • 3 cloves Garlic
  • 2 tbsp Lemon Juice
  • Salt and Pepper
  • Enough Water to soak the bread

Instructions

Soak the Bread

  1. Place the bread pieces in a small bowl and cover with water. Allow to soak until soft, about 10 minutes. Squeeze out the excess water.

Prepare the Herb Mixture

  1. In a large mixing bowl, combine the spinach, parsley, dill, chives, tarragon, and garlic.

Blend the Ingredients

  1. Transfer the soaked bread and herb mixture to a blender. Add olive oil and lemon juice. Blend until smooth.

Season and Chill

  1. Pour the sauce back into the bowl. Season with salt and pepper to taste. Refrigerate for at least one hour to allow flavors to meld.

Notes

  • For a smoother sauce, strain the blended mixture through a fine-mesh sieve.
  • Toasted bread adds a nutty flavor; toast the bread lightly before soaking for enhanced taste.
