A delightful twist on the classic bellini, this frozen cocktail is infused with rosemary for a refreshing summer treat.


Ingredients

  • Rosemary Simple Syrup
  • 1 cup sugar
  • 1 cup water
  • 3-4 sprigs fresh rosemary
  • Frozen Peach Bellini
  • 1 cup frozen peaches
  • 1 tablespoon rosemary simple syrup
  • 1 ounce peach schnapps
  • 3 ounces prosecco

Instructions

  1. To make the rosemary simple syrup, combine sugar, water, and rosemary sprigs in a small saucepan over medium heat.
  2. Stir until the sugar has dissolved and let it simmer for about 5 minutes.
  3. Remove from heat and let it cool completely. Strain out the rosemary.
  4. For the frozen peach bellini, blend frozen peaches, rosemary simple syrup, and peach schnapps until smooth.
  5. Pour the mixture into a glass and top with prosecco. Stir gently and serve immediately.
