Roasted Sweet Potatoes with Everything Seasoning

Description

Sweet potatoes get a flavor boost from everything bagel seasoning. Crispy edges and tender insides make this a simple side.


Ingredients

Scale
  • 2-3 medium sweet potatoes
  • olive oil
  • 2-3 tbsp Trader Joe’s Everything But the Bagel Seasoning (or another similar seasoning mix)
  • Salt
  • Hot Sauce (options but not really)

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. Bring a medium pot of salted water to a boil.
  3. Line a large rimmed baking sheet with parchment paper.
  4. Wash and slice sweet potatoes into 1 1/2 inch slices.
  5. Add the sweet potato slices to the boiling water and cook until tender.
  6. Drain the potatoes and lay them in a single layer on the prepared baking sheet.
  7. Lightly grease the bottom of a measuring cup or drinking glass with olive oil.
  8. Smash each potato slice using the greased cup or glass, being careful not to break through the parchment.
  9. Drizzle the potatoes with olive oil and roast for 15-20 minutes, or until golden and crispy.
  10. Sprinkle with Everything But the Bagel Seasoning and drizzle with hot sauce.

Notes

  • For extra crispy sweet potatoes, parboil them for a shorter time (about 5 minutes) before roasting.
  • If you don’t have everything bagel seasoning, a blend of sesame seeds, poppy seeds, dried onion, and salt works well.
  • Store leftover sweet potatoes in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
