Description
Sweet potatoes get a flavor boost from everything bagel seasoning. Crispy edges and tender insides make this a simple side.
Ingredients

- 2-3 medium sweet potatoes
- olive oil
- 2-3 tbsp Trader Joe’s Everything But the Bagel Seasoning (or another similar seasoning mix)
- Salt
- Hot Sauce (options but not really)
Instructions
- Preheat your oven to 425°F (218°C).
- Bring a medium pot of salted water to a boil.
- Line a large rimmed baking sheet with parchment paper.
- Wash and slice sweet potatoes into 1 1/2 inch slices.
- Add the sweet potato slices to the boiling water and cook until tender.
- Drain the potatoes and lay them in a single layer on the prepared baking sheet.
- Lightly grease the bottom of a measuring cup or drinking glass with olive oil.
- Smash each potato slice using the greased cup or glass, being careful not to break through the parchment.
- Drizzle the potatoes with olive oil and roast for 15-20 minutes, or until golden and crispy.
- Sprinkle with Everything But the Bagel Seasoning and drizzle with hot sauce.
Notes
- For extra crispy sweet potatoes, parboil them for a shorter time (about 5 minutes) before roasting.
- If you don’t have everything bagel seasoning, a blend of sesame seeds, poppy seeds, dried onion, and salt works well.
- Store leftover sweet potatoes in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
