- 1 tablespoon extra virgin olive oil
- 4 sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 8 ounces feta cheese, cut into 1/2-inch cubes
- 1 cup dried cranberries
- Bamboo skewers (4-inch)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, combine the sweet potato cubes with extra virgin olive oil, garlic powder, salt, and pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly browned, stirring halfway through the cooking time.
- Remove the sweet potatoes from the oven and let them cool slightly.
- To assemble the skewers, thread one piece of roasted sweet potato, one cube of feta cheese, and a few dried cranberries onto each bamboo skewer. Repeat until all ingredients are used.
- Arrange the skewers on a serving platter and serve immediately.
Notes
These skewers are best served fresh but can be prepared a few hours in advance and stored in the refrigerator. If you prefer a milder cheese, substitute feta with mozzarella. For added flavor, try sprinkling some fresh herbs like thyme or rosemary over the skewers before serving.
