Description

Sweet and savory roasted pumpkin, tart cranberries, and creamy goat cheese make a perfect fall side dish. Warm, beautiful, and easy to make!


Ingredients

  • 3 cups (710 ml) Pumpkin Cubed
  • 2 tbsp Olive Oil
  • 1 tbsp maple Syrup
  • Salt
  • 1/4 cup Cranberries
  • 1/4 lb French Fresh Goat Cheese Log

Instructions

  1. Preheat oven to 392°F (200°C).
  2. Line a baking tray with aluminum foil.
  3. In a bowl, combine pumpkin, olive oil, maple syrup, and salt; mix well.
  4. Spread the pumpkin in a single layer on the baking tray.
  5. Sprinkle cranberries on top.
  6. Bake for 20-25 minutes.
  7. Transfer the pumpkin to a serving bowl.
  8. Scatter goat cheese on top.
  9. Serve warm.

Notes

  • To enhance sweetness, roast the pumpkin and cranberries separately for the first 15 minutes before combining them for the final 5-10 minutes.
  • For a tangier flavor, add a squeeze of fresh orange juice to the pumpkin mixture before roasting.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. The goat cheese may become slightly firmer upon refrigeration.
