- 3 cups (710 ml) Pumpkin Cubed
- 2 tbsp Olive Oil
- 1 tbsp maple Syrup
- Salt
- 1/4 cup Cranberries
- 1/4 lb French Fresh Goat Cheese Log
Instructions
- Preheat oven to 392°F (200°C).
- Line a baking tray with aluminum foil.
- In a bowl, combine pumpkin, olive oil, maple syrup, and salt; mix well.
- Spread the pumpkin in a single layer on the baking tray.
- Sprinkle cranberries on top.
- Bake for 20-25 minutes.
- Transfer the pumpkin to a serving bowl.
- Scatter goat cheese on top.
- Serve warm.
Notes
- To enhance sweetness, roast the pumpkin and cranberries separately for the first 15 minutes before combining them for the final 5-10 minutes.
- For a tangier flavor, add a squeeze of fresh orange juice to the pumpkin mixture before roasting.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. The goat cheese may become slightly firmer upon refrigeration.
