A vibrant salad combining roasted cherry tomatoes, succulent tandoori chicken tikka, and creamy boccocini cheese, garnished with fresh herbs for a delightful Indian twist.


Ingredients

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 kg chicken breast, boneless and skinless, cut into cubes
  • 2 tablespoons tandoori masala, for the chicken marinade
  • 1 tablespoon tandoori masala, for the tomatoes
  • 1/4 cup yogurt
  • 1 tablespoon ginger garlic paste
  • 1-2 green chilies, optional
  • 1 tablespoon lemon juice
  • 15-20 boccocini (small mozzarella balls)
  • 1 red onion, finely cubed
  • Fresh coriander leaves for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the cherry tomatoes with the tandoori masala, olive oil, salt, and pepper. Roast in the oven for 20 minutes.
  3. In a bowl, mix the chicken cubes with tandoori masala, yogurt, ginger garlic paste, green chilies, lemon juice, and salt. Marinate for at least 30 minutes, preferably overnight.
  4. Grill the marinated chicken until cooked through.
  5. In a large bowl, combine the roasted tomatoes, grilled chicken, boccocini cheese, and red onion.
  6. Garnish with fresh coriander leaves and serve.

Notes

For best results, marinate the chicken overnight to enhance the flavors. This salad is perfect for outdoor barbecues; you can grill the chicken and tomatoes instead of roasting them. Serve immediately for the freshest taste. Store leftovers in an airtight container in the refrigerator for up to 2 days.
