Description

Rainbow Swiss chard tossed raw with roasted almonds, crumbled Roquefort, and blueberries in a simple balsamic vinaigrette.

Ingredients

  • 4 large leaves of rainbow swiss chard
  • A small handful of roasted almonds, chopped
  • 2 tbsp Roquefort cheese, crumbled
  • A handful of blueberries

Instructions

  1. Clean the rainbow swiss chard leaves and pat them dry. Tear them into smaller pieces and place them in a bowl.
  2. Add the almonds, Roquefort cheese crumbles, and blueberries. Toss.
  3. Drizzle with a simple balsamic vinaigrette.

Notes

  • To enhance the chard’s flavor, massage the leaves gently with a little olive oil before adding other ingredients.
  • If Roquefort is too strong, try substituting goat cheese or feta for a milder flavor.
  • For best flavor, use fresh, high-quality balsamic vinaigrette. Alternatively, make your own!
