These protein-filled blondies are a guilt-free treat, packed with chickpeas and naturally sweetened with peanut butter and maple syrup.

- 1 can of low sodium chickpeas, drained and rinsed well
- 1/2 cup of peanut butter
- 1/4 cup maple syrup
- 1 tablespoon of vanilla extract or paste
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Spray an 8×8 inch glass baking pan with baking spray and set aside.
- In a Vitamix or food processor, combine the chickpeas, peanut butter, maple syrup, vanilla extract, salt, baking soda, and baking powder. Blend until the mixture is smooth and creamy.
- Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the blondies to cool in the pan for at least 10 minutes before slicing and serving.
Notes
These blondies are perfect for a healthy snack that won’t derail your diet. Store them in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. You can substitute almond butter for peanut butter if desired.
