Description

These protein-filled blondies are a guilt-free treat, packed with chickpeas and naturally sweetened with peanut butter and maple syrup.


Ingredients

  • 1 can of low sodium chickpeas, drained and rinsed well
  • 1/2 cup of peanut butter
  • 1/4 cup maple syrup
  • 1 tablespoon of vanilla extract or paste
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Spray an 8×8 inch glass baking pan with baking spray and set aside.
  2. In a Vitamix or food processor, combine the chickpeas, peanut butter, maple syrup, vanilla extract, salt, baking soda, and baking powder. Blend until the mixture is smooth and creamy.
  3. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  4. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  5. Allow the blondies to cool in the pan for at least 10 minutes before slicing and serving.

Notes

These blondies are perfect for a healthy snack that won’t derail your diet. Store them in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. You can substitute almond butter for peanut butter if desired.
