Description

Tangy and spicy prawn satay with roasted mandarin slices, offering a burst of flavor in every bite.


Ingredients

  • 3 large mandarins, sliced
  • 2 tbsp (30 ml) chili pepper flakes
  • 2 tbsp (30 ml) kosher salt
  • 500g jumbo prawns
  • 1 tbsp (15 ml) extra virgin olive oil

Instructions

  1. Preheat your oven to 170°C (340°F).
  2. Place the mandarin slices on a baking tray. Bake for 45 minutes, ensuring they do not burn or char. Keep a close eye on them during this time.
  3. Once roasted, leave the oven door slightly open and let the mandarins cool inside the oven.
  4. In a bowl, combine the chili pepper flakes and kosher salt.
  5. Coat the jumbo prawns with extra virgin olive oil, then sprinkle the chili-salt mixture over them, ensuring an even coating.
  6. Skewer the prawns and grill them on a preheated grill for about 3-4 minutes on each side, or until they turn pink and are cooked through.
  7. Serve the grilled prawns with the roasted mandarin slices.

  • Ensure the mandarins are not burnt by keeping a close watch while baking.
  • The prawns should be cooked until they are just pink to avoid overcooking.
