Description

Flaky puff pastry filled with a creamy blend of roasted pumpkin and potatoes. A simple yet elegant side dish, perfect for autumn.


Ingredients

Units
  • 1 lbs (454 g) pumpkin
  • 9 oz (250 g) potatoes
  • Salt
  • Pepper
  • 3 oz (100 g) Parmigiano cheese
  • 1 sheet (or about 14 oz) puff pastry

Instructions

  1. Cut potatoes and pumpkin into squares and steam them separately.
  2. Once cooked, sieve the potatoes and pumpkin.
  3. Season with Parmigiano cheese, salt, and pepper to taste.
  4. Roll out puff pastry and place it on a baking sheet.
  5. Pour the potato and pumpkin mixture onto the pastry.
  6. Bake at 180°C (356°F) for 30-35 minutes.

Notes

  • For a richer flavor, roast the pumpkin and potatoes instead of steaming them.
  • If puff pastry is unavailable, use a store-bought pie crust as an alternative.
  • To prevent soggy pastry, pre-bake the crust for 10 minutes before adding the filling.
