Description

A delicious gluten-free potato farl wrap filled with succulent lobster, garlic butter, and fresh herbs, perfect for a seafood twist on a classic dish.


Ingredients

  • 1/2 pound mashed potatoes (use dehydrated potato flakes for convenience)
  • 1/2 teaspoon salt
  • 1 tablespoon butter, melted
  • 2 ounces rice flour
  • 1/4 teaspoon baking powder
  • 1/4 cup milk (optional, if needed)
  • 4 ounces lobster meat, cooked and chopped
  • 2 tablespoons garlic butter
  • 1 tablespoon fresh herbs (such as parsley or chives), chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, sift together the rice flour, salt, and baking powder.
  2. Stir in the mashed potatoes and melted butter, mixing until combined. Add milk if necessary to achieve a smooth dough.
  3. Turn the dough out onto a floured surface and knead until smooth.
  4. Roll the dough out to about 1/4 inch thickness and cut into rounds or desired shapes.
  5. Heat a non-stick fry pan over medium heat and cook the farls for about 3-4 minutes on each side, or until golden brown.
  6. In a separate pan, melt the garlic butter over medium heat. Add the lobster meat and cook for 2-3 minutes, until heated through.
  7. Stir in the fresh herbs and lemon juice, and season with salt and pepper to taste.
  8. To assemble, place the lobster mixture onto the cooked potato farls and wrap or fold them as desired. Serve immediately.

Notes

For a quicker preparation, use dehydrated potato flakes to make the mashed potatoes. The farls can be stored in an airtight container for up to 2 days and reheated before serving. Experiment with different herbs to find your favorite flavor combination.
