Description
Sweet and tender pears poached in a fragrant saffron syrup. A beautiful and elegant dessert, perfect for any occasion.
Ingredients

- 0.5 tsp Saffron threads
- 3 cups (700 ml) Water
- 6 oz (175 g) Sugar
- 2 slices Young ginger
- lemon zest from one lemon
- 3 tbsp Lemon juice
- 4-5 medium size Firm pears, peeled with stalks left on
Instructions
- Combine water, sugar, lemon zest, lemon juice, ginger, and saffron in a medium-sized pot.
- Turn up the heat and stir until the sugar dissolves.
- Peel pears, leaving the stalks on, and add them to the saffron liquid. Cover with a lid.
- Simmer for 30-40 minutes, turning occasionally, until the pears are tender but not mushy. Test a pear with a skewer.
- Remove the pears with a slotted spoon and transfer them to a bowl.
- Increase the heat and boil the poaching liquid until it reduces to almost half.
- Pour the syrup over the pears and let them cool and chill for a few hours or until the next day.
- To serve, place a poached pear on a serving plate, drizzle with a little saffron syrup, and garnish with some chopped pistachio nuts.
Notes
- For a more intense saffron flavor, steep the saffron threads in 1/4 cup of warm water for 10 minutes before adding to the poaching liquid.
- If pears are not fully ripe, increase poaching time by 10-15 minutes, or until easily pierced with a fork.
- Store poached pears and syrup separately in airtight containers in the refrigerator for up to 5 days. The syrup will thicken as it cools.
