Description

This quick and easy Pineapple and Mango Shrimp Ceviche is a refreshing dish that combines the sweetness of tropical fruits with tender shrimp, perfect for a light and healthy appetizer.


Ingredients

  • 1 lb (450g) raw shrimp, peeled, deveined, and thinly sliced
  • Juice of 3 large limes
  • 1/4 cup white onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 medium tomato, diced
  • 1/2 cup fresh pineapple, diced
  • 1/2 cup fresh mango, diced

Instructions

  1. Slice the raw shrimp really thin or chop them into small cubes.
  2. Squeeze the juice of 3 large and juicy limes over the shrimp.
  3. Cover and refrigerate until the shrimp are opaque and white.
  4. Once the shrimp are ‘cooked’, squeeze out the excess lime juice.
  5. Add onion, cilantro, garlic, tomato, pineapple, and mango to the shrimp.
  6. Cover and refrigerate for an hour or so, just until chilled.
  7. Serve with chips, crackers, or enjoy directly.
