Description

Creamy pesto chicken salad, served in a lovely croissant, perfect for a quick lunch or light dinner.


Ingredients

  • 2 cups (473 ml) cooked chicken
  • 1/4 cup (60 ml) high-quality mayo
  • 3 tablespoons pesto
  • 2 croissants
  • A handful of arugula and pine nuts
  • Salt and pepper

Instructions

  1. Combine all ingredients in a large bowl.
  2. Place in an airtight container and refrigerate for at least 1 hour.
  3. Serve on toasted bread or a croissant with some arugula and top with some fresh pine nuts.
