- Feta or goat cheese
- Slices of baguette or other bread
- Olive oil
- 1 clove garlic
Instructions
- Chop fresh mint.
- Slice the beets and grill until tender. Check with a fork for doneness.
- Grill or toast the bread slices until lightly golden.
- Rub the bread with raw garlic (cut the clove in half).
- Drizzle oil over the bread.
- Place the grilled beet slices on the bread, top with cheese and mint.
Notes
- For optimal grilling, cut beets into uniform slices of about 1/4 inch thickness for even cooking.
- If fresh mint is unavailable, substitute 1/4 teaspoon dried mint flakes.
- Store leftover bruschetta in an airtight container in the refrigerator for up to 2 days; re-crisp bread slices in a toaster oven before serving.
