Description

These vibrant pea fritters are a delightful way to enjoy fresh vegetables, paired perfectly with a refreshing dill yogurt dip.


Ingredients

  • 7 oz (200 g) peas
  • 1 tsp salt
  • 2 tbsp (30 ml) milk
  • 1/2 cup (60 g) whole wheat flour
  • 1 tsp baking powder
  • 1 egg
  • Olive oil, for frying
  • 7 oz (200 g) Greek-style yogurt
  • 1 tsp dill
  • Salt, to taste

Instructions

  1. Cook the peas in salted boiling water for 5 minutes until tender. Drain and rinse under cold water to stop the cooking process.
  2. Mash the peas with a fork until they are partially crushed, leaving some whole for texture.
  3. In a mixing bowl, combine the mashed peas, milk, whole wheat flour, baking powder, and egg. Mix well until you have a thick batter.
  4. Heat a skillet over medium heat and add a drizzle of olive oil.
  5. Spoon the batter into the skillet to form fritters, flattening them slightly with the back of the spoon.
  6. Fry the fritters for about 3-4 minutes on each side, or until golden brown and cooked through.
  7. In a small bowl, mix the Greek-style yogurt with dill and a pinch of salt to make the dip.
  8. Serve the fritters warm with the yogurt dip on the side.

Notes

  • These fritters are best served immediately while warm and crispy.
  • You can substitute dill with mint or parsley for a different flavor.
