Description

Crispy on the outside, these golden Parmesan and Garlic Potato Bites are a delicious update to traditional mashed potatoes.


Ingredients

Units Scale
  • 2 cups (480 ml) Mashed Potatoes
  • 3 tbsp Shallots (minced)
  • 2 Cloves Garlic (minced)
  • 1 Egg slightly beaten
  • 1/3 cup (80 ml) Parmesan Cheese (grated)
  • 2 tbsp Italian Parsley (finely chopped)
  • 3/4 cup (180 ml) Italian Style Breadcrumbs
  • Canola Oil for frying

Instructions

  1. In a medium bowl, combine the mashed potatoes, shallots, garlic cloves, egg, and Italian parsley. Shape into 1 inch balls.
  2. Refrigerate the potato balls for 30 minutes.
  3. Next, roll the potato balls in the parmesan cheese and breadcrumbs. Preheat a skillet with about 2 inches of oil on moderate heat.
  4. Fry potato balls on all sides, a few at a time, for 2 to 4 minutes or until golden brown. Remove with a slotted spoon to paper towels to drain. Serve immediately.
