- 1 pound ground turkey
- 1 egg (whisked)
- 1 large carrot (shredded (about 1/2 cup))
- 3 green onions (sliced (about 1/4 cup))
- 1 tablespoon ginger (grated)
- 2 tablespoons cilantro (minced)
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons coconut aminos
- 1/2 teaspoon salt (omit if using soy sauce)
Sauce
- 1/4 cup chicken broth
- 1/4 cup coconut aminos
- 1 tablespoon fish sauce
- 2 teaspoon ginger (grated)
- 1 teaspoon chili garlic sauce
- 1 tablespoon sesame oil
- Serve over cooked rice (cauliflower rice, or quinoa.)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground turkey, whisked egg, shredded carrot, sliced green onions, grated ginger, minced cilantro, and crushed red pepper flakes. Mix well until all ingredients are evenly incorporated.
- Form the mixture into 1-tablespoon-sized meatballs and place them on the prepared baking sheet, ensuring they are evenly spaced.
- Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside.
- While the meatballs are baking, prepare the sauce by mixing together the fish sauce, coconut aminos, lime juice, sesame oil, salt, and pepper in a small bowl.
- Once the meatballs are done, drizzle the sauce over them and serve immediately with a side of rice and steamed broccoli, if desired.
Notes
These meatballs pair well with rice and steamed vegetables like broccoli. The sauce can also be used as a dressing for the rice. You can store leftovers in an airtight container in the refrigerator for up to 3 days. For a spicier kick, increase the amount of crushed red pepper flakes.
