Description

These oven-baked cauliflower fritters are a simple and delicious appetizer, perfect for serving with a dipping sauce and salad.


Ingredients

  • 2 medium cauliflower heads, divided into florets
  • 1/2 cup bread crumbs
  • 4 eggs
  • 2 teaspoons dried oregano
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bring a large pot of water to a boil. Add the cauliflower florets and boil for about 10 minutes, or until they start to soften. Test by poking with a fork; it should go in easily into the floret stem.
  3. Drain the cauliflower and let it cool slightly.
  4. In a large bowl, mash the cauliflower with a fork or potato masher until it reaches a chunky consistency.
  5. Add the bread crumbs, eggs, dried oregano, and salt to the mashed cauliflower. Mix well until all ingredients are combined.
  6. Line a baking sheet with parchment paper.
  7. Scoop the cauliflower mixture onto the baking sheet, forming small patties or fritters.
  8. Bake in the preheated oven for 25-30 minutes, or until the fritters are golden brown and firm to the touch.
  9. Remove from the oven and let cool slightly before serving.

Notes

If you want a smaller quantity, you can halve the recipe. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Serve with your favorite dipping sauce or a side salad for a complete meal.
