- 1 can (454 g) black beans
- 1 each carrot
- 1/2 cup celery
- 1/2 cup red pepper
- 1/2 cup onion
- 2 each garlic cloves
- 1 cups (237 ml) salsa
- 1 cups (237 ml) panko breadcrumbs
- 1/4 cup oatmeal
- 1/4 cup flour
- 1 teaspoon Creole seasoning
- 1/4 tsp ground black pepper
- 1/4 tsp salt
- Nonstick cooking spray
Instructions
For the Corn Salsa
For the Burgers
- Preheat oven to 425°F (220°C). Spray two baking sheets with nonstick spray.
- Add carrots to a bowl with water, cover, and microwave for 2 minutes. Cool, then combine with black beans in a food processor; blend until smooth with some chunks remaining.
- Transfer mixture to a large bowl. Add celery, red pepper, onion, garlic, salsa, breadcrumbs, oatmeal, flour, Creole seasoning, black pepper, and salt. Mix to combine.
- Form mixture into medium-sized patties and place on baking sheets. Bake for 20 minutes, flipping halfway through.
Notes
- For a richer flavor, sauté the onion, garlic, red pepper, and celery before adding them to the bean mixture.
- If the mixture is too wet, add more breadcrumbs or oats, one tablespoon at a time, until it holds its shape.
- These burgers freeze well! Cool completely, then wrap individually in plastic wrap before storing in a freezer bag for up to 3 months.
