Description

A simple, elegant weeknight meal. Plump mussels in a fragrant garlic and white wine sauce, perfect with crusty bread.


Ingredients

  • 1-2 lbs (0-907 g) Mussels
  • 1.5 cups (355 ml) White Wine
  • 3-4 cloves Garlic Cloves, Minced
  • Salt and Black Peppercorn
  • 3 tbsp Extra Virgin Olive Oil
  • 0.5 cups (118 ml) Parsley, Chopped
  • 0.5 tsp Red Pepper Flakes

Instructions

  1. In a large pot over medium-high heat, add olive oil.
  2. Add mussels, stir, then add garlic and stir again.
  3. Pour in white wine, cover, and cook for 3-4 minutes.
  4. Add chopped parsley, stir, and cook for another 4 minutes, or until the mussels open and the meat turns slightly orange or tan.
  5. Place the mussels in a large bowl.
  6. Cut a baguette into slices and serve alongside the mussels.
  7. Garnish with additional parsley, if desired.

Notes

  • Discard any mussels that do not open after cooking; they are not safe to eat.
  • Dry white wine, like Sauvignon Blanc or Pinot Grigio, works best in this recipe.
  • For a richer flavor, add a tablespoon of butter to the sauce at the end of cooking.
