Scale
- 10 oz (283 g) Mixed wild mushrooms
- 2 tbsp Extra Virgin Olive Oil
- 5 oz (142 g) goat cheese
- 2 tbsp Milk
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 clove garlic
- 6-12 tsp coarse ground mustard
- 6 slices gouda cheese
- Extra Virgin olive oil
- 6 slices Multigrain bread
- 1 large green apple sliced thin
Instructions
- Chop mushrooms.
- Heat 2 tablespoons olive oil in a pan. Add mushrooms, salt, and pepper.
- Cook for about 15 minutes on medium heat until caramelized.
- In a bowl, soften goat cheese with a fork or spoon. Add 2 tablespoons of milk, one tablespoon at a time, until a thick cream forms.
- Add the cooked mushrooms to the goat cheese cream.
- Toast bread and drizzle olive oil on the outside of each slice.
- Spread 1-2 teaspoons of mustard on the inside of each slice of bread.
- Spread 2 tablespoons of the goat cheese and mushroom mixture on each slice of bread.
- Add 1 slice of Gouda cheese to each slice of bread.
- Add 3 slices of green apple to each slice of bread.
- Assemble the sandwich.
- Heat a non-stick skillet on medium heat (approximately 300-350°F / 150-175°C).
- Brown the sandwich on both sides until golden, crunchy, and the Gouda cheese is melted. Approximately 3-4 minutes per side.
Notes
- For a richer flavor, sauté the garlic with the mushrooms for the last minute of cooking.
- If goat cheese is too tart, add a pinch of sugar to the mixture to balance the flavors.
- To prevent the sandwich from becoming soggy, use a low-to-medium heat and cook slowly.
