Mushroom, Goat and Gouda Grilled Cheese

Description

Crispy bread, creamy goat cheese, nutty Gouda,
and earthy mushrooms with a hint of apple.


Ingredients

Units Scale
  • 10 oz (283 g) Mixed wild mushrooms
  • 2 tbsp Extra Virgin Olive Oil
  • 5 oz (142 g) goat cheese
  • 2 tbsp Milk
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1 clove garlic
  • 6-12 tsp coarse ground mustard
  • 6 slices gouda cheese
  • Extra Virgin olive oil
  • 6 slices Multigrain bread
  • 1 large green apple sliced thin

Instructions

  1. Chop mushrooms.
  2. Heat 2 tablespoons olive oil in a pan. Add mushrooms, salt, and pepper.
  3. Cook for about 15 minutes on medium heat until caramelized.
  4. In a bowl, soften goat cheese with a fork or spoon. Add 2 tablespoons of milk, one tablespoon at a time, until a thick cream forms.
  5. Add the cooked mushrooms to the goat cheese cream.
  6. Toast bread and drizzle olive oil on the outside of each slice.
  7. Spread 1-2 teaspoons of mustard on the inside of each slice of bread.
  8. Spread 2 tablespoons of the goat cheese and mushroom mixture on each slice of bread.
  9. Add 1 slice of Gouda cheese to each slice of bread.
  10. Add 3 slices of green apple to each slice of bread.
  11. Assemble the sandwich.
  12. Heat a non-stick skillet on medium heat (approximately 300-350°F / 150-175°C).
  13. Brown the sandwich on both sides until golden, crunchy, and the Gouda cheese is melted. Approximately 3-4 minutes per side.

Notes

  • For a richer flavor, sauté the garlic with the mushrooms for the last minute of cooking.
  • If goat cheese is too tart, add a pinch of sugar to the mixture to balance the flavors.
  • To prevent the sandwich from becoming soggy, use a low-to-medium heat and cook slowly.
