Description

- 1 English Muffin
- 1 Cheese Slice
- 1 Egg
- Salt & Pepper, to taste
- Oil, for cooking
- 2 Sweet Potatoes, cooked
- 1 cup (240 ml) Cooked Chicken, cubed
- Hot Curry Powder, to taste (used Sadaf brand)
- Turmeric Powder, a few pinches
- Salt, to taste
Instructions
- Split the English muffin and toast it until golden brown and crispy.
- In a bowl, beat the egg with a pinch of salt and pepper.
- Heat a small amount of oil in a pan over medium heat. Pour in the beaten egg and cook for about 2 minutes on each side, or until fully set and slightly golden.
- Place the cooked egg and cheese slice inside the toasted English muffin.
- For the sweet potato side, cut the cooked sweet potatoes into cubes.
- In a separate pan, heat a little oil and add the cubed sweet potatoes and chicken.
- Sprinkle with hot curry powder, turmeric powder, and salt to taste. Stir well to combine and cook for 5-7 minutes, until heated through and well-coated with spices.
- Serve the sandwich with the curried sweet potato and chicken on the side.
Notes
- For a balanced meal, serve with yogurt or fresh fruit.
- Adjust the amount of curry powder to your taste preference.
- The sandwich and sweet potato side can be prepared ahead and reheated for a quick meal.
