Description

A quick Mediterranean-style dish,
perfect alongside meat or fish.


Ingredients

  • 2 lbs (907 g) potatoes
  • 1 lbs (454 g) onion
  • 5 cloves garlic
  • 2 tbsp olive oil
  • 0.5 tsp dry oregano
  • salt
  • 1 cup (237 ml) tomato sauce

Instructions

  1. Fry onions in olive oil until soft.
  2. Add garlic, potatoes, tomato sauce, and enough water to cover the potatoes.
  3. Season with oregano, salt, and pepper.
  4. Cook for about ½ hour or until potatoes are cooked through, stirring occasionally.
  5. Serve immediately.
  6. Store leftovers in the refrigerator for the next day.

  • For a richer flavor, use a high-quality extra virgin olive oil.
  • Consider adding a pinch of red pepper flakes for a touch of heat.
