Description

A quick Mediterranean-style dish,
perfect alongside meat or fish.


Ingredients

Units
  • 2 lbs (907 g) potatoes
  • 1 lbs (454 g) onion
  • 5 cloves garlic
  • 2 tbsp olive oil
  • 0.5 tsp dry oregano
  • salt
  • 1 cup (237 ml) tomato sauce

Instructions

  • Fry onions in olive oil until soft.
  • Add garlic, potatoes, tomato sauce, and enough water to cover the potatoes.
  • Season with oregano, salt, and pepper.
  • Cook for about 1/2 hour or until potatoes are cooked through, stirring occasionally.
  • Serve immediately.
  • Store leftovers in the refrigerator for the next day.

  • For a richer flavor, use a high-quality extra virgin olive oil.
  • Consider adding a pinch of red pepper flakes for a touch of heat.
