- 2 lbs (907 g) potatoes
- 1 lbs (454 g) onion
- 5 cloves garlic
- 2 tbsp olive oil
- 0.5 tsp dry oregano
- salt
- 1 cup (237 ml) tomato sauce
Instructions
- Fry onions in olive oil until soft.
- Add garlic, potatoes, tomato sauce, and enough water to cover the potatoes.
- Season with oregano, salt, and pepper.
- Cook for about ½ hour or until potatoes are cooked through, stirring occasionally.
- Serve immediately.
- Store leftovers in the refrigerator for the next day.

- For a richer flavor, use a high-quality extra virgin olive oil.
- Consider adding a pinch of red pepper flakes for a touch of heat.
