- 1 medium pomegranate, halved and seeded
- 1 cup (240 ml) vanilla yogurt
- 1 large mango, diced
- 1/4 cup (4 tablespoons) honey, divided
Instructions
- Peel and dice the mango into small cubes, about 1/2-inch pieces.
- Seed the pomegranate: cut it in half, hold each half cut-side down over a bowl, and tap the back firmly with a wooden spoon to release the arils.
- Get two tall glasses or mason jars ready. Start each with 1 tablespoon of honey (2 tablespoons total) drizzled across the bottom.
- Add a layer of diced mango, then a generous layer of vanilla yogurt, then a scattering of pomegranate arils.
- Repeat the layers: honey (1 tablespoon per glass), mango, yogurt, pomegranate.
- Top with a final sprinkle of pomegranate arils and chopped nuts or granola if desired. Serve immediately or refrigerate for up to 2 hours.
Notes
- For a richer flavor, use Greek yogurt instead of vanilla yogurt.
- If pomegranate arils are unavailable, substitute with raspberries or other berries.
- Store parfaits in airtight containers in the refrigerator for up to 2 days.
