Description

A vibrant and refreshing salad featuring sweet mango, fresh mint, and crispy peas, all tossed in a zesty lime dressing. Perfect for showcasing your garden’s bounty.


Ingredients

  • 1 ripe mango, diced
  • 1 cup fresh mint leaves, chopped
  • 1 cup fresh peas
  • 2 cups watercress
  • 1/2 cup chopped red onion
  • 1/4 cup extra virgin olive oil
  • 3 tbsp maple syrup
  • Zest of 1 lemon
  • Juice of 2 lemons
  • 1 clove garlic, minced
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. In a large bowl, combine the diced mango, chopped mint leaves, fresh peas, watercress, and red onion.
  2. In a small jar, combine the olive oil, maple syrup, lemon zest, lemon juice, garlic, salt, and pepper. Shake well to combine.
  3. Pour about half of the dressing over the salad and toss gently to combine. You’ll have dressing left over — save it for another salad.
  4. Serve immediately or chill for 10 minutes before serving.

Notes

This salad pairs beautifully with crab cakes or can be turned into a main course with the addition of goat cheese or burrata. Store any leftover salad in an airtight container in the refrigerator for up to 2 days. For a spicier kick, add a pinch of red pepper flakes to the dressing.
