- 1 ripe mango, diced
- 1 cup fresh mint leaves, chopped
- 1 cup fresh peas
- 2 cups watercress
- 1/2 cup chopped red onion
- 1/4 cup extra virgin olive oil
- 3 tbsp maple syrup
- Zest of 1 lemon
- Juice of 2 lemons
- 1 clove garlic, minced
- 1/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
Instructions
- In a large bowl, combine the diced mango, chopped mint leaves, fresh peas, watercress, and red onion.
- In a small jar, combine the olive oil, maple syrup, lemon zest, lemon juice, garlic, salt, and pepper. Shake well to combine.
- Pour about half of the dressing over the salad and toss gently to combine. You’ll have dressing left over — save it for another salad.
- Serve immediately or chill for 10 minutes before serving.
Notes
This salad pairs beautifully with crab cakes or can be turned into a main course with the addition of goat cheese or burrata. Store any leftover salad in an airtight container in the refrigerator for up to 2 days. For a spicier kick, add a pinch of red pepper flakes to the dressing.
