Description

A refreshing frozen treat made with kombucha. Easy to customize with your favorite fruits and herbs.


Ingredients

Base

  • 1 (14 oz / 397g) bottle kombucha
  • 1 tablespoon honey or maple syrup (adjust to taste)

Optional stir-ins (before freezing)

  • Fresh chopped herbs (e.g., tarragon, mint, or basil)
  • 1-2 teaspoons jam
  • Fresh chopped fruit
  • Lemon zest
  • A splash of orange juice

Optional toppings (to serve)

  • Whipped coconut cream (from 1 chilled can of full-fat coconut milk)
  • Drizzle of honey
  • Edible flowers, for garnish

Instructions

  1. Line a shallow dish or pan with parchment paper.
  2. Pour in the kombucha and whisk in honey or maple syrup, if desired. Taste and adjust sweetness to your liking.
  3. Stir in any additional desired stir-ins.
  4. Place in the freezer and scrape with a fork every 30 minutes until frozen solid, about 2–3 hours total.
  5. If using whipped coconut cream, place the can in the freezer 30 minutes before serving to separate the solids from the liquid. Pour off the liquid, then whip the coconut solids with a hand mixer, adding a little honey to sweeten if desired.
  6. Scoop the granita into glasses, top with whipped coconut cream and a drizzle of honey if using, and garnish with edible flowers. Serve immediately.

Notes

Scrape the granita every 30 minutes as it freezes — consistent scraping is what creates the signature flaky texture. Taste the base before freezing and adjust the sweetness, since you cannot easily change it once frozen.
