- 1 cup leftover mashed potatoes (or 1-2 cooked, mashed potatoes with added milk, butter, and salt and pepper)
- 2 tsp smashed garlic
- 1 egg
- 1 handful cheese
- 2 slices cooked bacon, crumbled
- 3 tbsp sour cream
- Chives, for garnish
- Pickled vegetables, optional
- Fresh herbs, optional
Instructions
- Preheat your oven to 350°F (175°C) and warm up your waffle iron to high.
- In a small dish, mix together the mashed potatoes, smashed garlic, and egg until well combined.
- Drop the potato mixture by the overflowing spoonful onto the waffle iron, spreading slightly to cover the surface.
- Cook for 5-7 minutes, or until the potato waffles are crispy and golden brown.
- Carefully remove the waffles and place them on a baking sheet. Top each waffle with cheese and crumbled bacon.
- Place the baking sheet in the oven for 5 minutes, or until the cheese is melted.
- Remove from the oven and top with a dollop of sour cream and a sprinkle of chives. Add pickled vegetables and fresh herbs if desired.
- Serve immediately as a delicious appetizer or snack.
