Description

These tiny, crispy potato waffle bites are loaded with cheese, bacon, and chives, making them the perfect party appetizer.


Ingredients

  • 1 cup leftover mashed potatoes (or 1-2 cooked, mashed potatoes with added milk, butter, and salt and pepper)
  • 2 tsp smashed garlic
  • 1 egg
  • 1 handful cheese
  • 2 slices cooked bacon, crumbled
  • 3 tbsp sour cream
  • Chives, for garnish
  • Pickled vegetables, optional
  • Fresh herbs, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and warm up your waffle iron to high.
  2. In a small dish, mix together the mashed potatoes, smashed garlic, and egg until well combined.
  3. Drop the potato mixture by the overflowing spoonful onto the waffle iron, spreading slightly to cover the surface.
  4. Cook for 5-7 minutes, or until the potato waffles are crispy and golden brown.
  5. Carefully remove the waffles and place them on a baking sheet. Top each waffle with cheese and crumbled bacon.
  6. Place the baking sheet in the oven for 5 minutes, or until the cheese is melted.
  7. Remove from the oven and top with a dollop of sour cream and a sprinkle of chives. Add pickled vegetables and fresh herbs if desired.
  8. Serve immediately as a delicious appetizer or snack.
