For the Greek Chicken
- 1 1/2 pounds (680 g) Cooked Chicken, shredded or chopped
- 1/3 cup (79 ml) Extra Virgin Olive Oil
- 2 cloves Garlic, minced
- 1 Lemon, juiced (about 2 1/2 to 3 tablespoons / 37-44 ml)
- 2 tablespoons (30 ml) Minced Shallot
- 1 tablespoon (15 ml) Red Wine Vinegar
- 2 teaspoons (10 ml) Honey
- 1 teaspoon (5 ml) Greek Seasoning
For the Bowls
- 2 cups (473 ml) Hummus
- 227 g (8 ounces) Feta
- 1 Persian Cucumber
- 1 cup (237 ml) Cherry Tomatoes
- 1/2 cup (118 ml) Kalamata Olives
- Pita Chips
- Pickled Red Onions
Instructions
Make the easy Greek Chicken
- In a bowl, whisk together the olive oil, garlic, lemon juice, shallot, red wine vinegar, honey, and Greek seasoning to make the vinaigrette. Reserve 2-4 tablespoons of the vinaigrette to drizzle over the bowls later.
- Toss the cooked chicken with the remaining vinaigrette until well coated. For best flavor, cover and refrigerate for at least 30 minutes to marinate.
Assemble the hummus bowls
- Spread the hummus in an even layer in bowls or on a serving platter. Top with the vinaigrette coated chicken. Scatter feta, cucumbers, tomatoes, olives and pickled onions on top. Drizzle with remaining vinaigrette. Serve with pita chips and optional garnishes.
Notes
- For optimal flavor, marinate the chicken in the vinaigrette for at least 30 minutes before cooking.
- To make this recipe vegan, substitute the feta cheese with crumbled vegan feta or nutritional yeast.
- Store leftover hummus and chicken separately in airtight containers in the refrigerator for up to 4 days.
