Mediterranean-inspired hummus bowls topped with flavorful Greek chicken and fresh veggies. A vibrant and healthy meal.


Ingredients

Units

For the Greek Chicken

  • 1 1/2 pounds (680 g) Cooked Chicken, shredded or chopped
  • 1/3 cup (79 ml) Extra Virgin Olive Oil
  • 2 cloves Garlic, minced
  • 1 Lemon, juiced (about 2 1/2 to 3 tablespoons / 37-44 ml)
  • 2 tablespoons (30 ml) Minced Shallot
  • 1 tablespoon (15 ml) Red Wine Vinegar
  • 2 teaspoons (10 ml) Honey
  • 1 teaspoon (5 ml) Greek Seasoning

For the Bowls

  • 2 cups (473 ml) Hummus
  • 227 g (8 ounces) Feta
  • 1 Persian Cucumber
  • 1 cup (237 ml) Cherry Tomatoes
  • 1/2 cup (118 ml) Kalamata Olives
  • Pita Chips
  • Pickled Red Onions

Instructions

Make the easy Greek Chicken

  1. In a bowl, whisk together the olive oil, garlic, lemon juice, shallot, red wine vinegar, honey, and Greek seasoning to make the vinaigrette. Reserve 2-4 tablespoons of the vinaigrette to drizzle over the bowls later.
  2. Toss the cooked chicken with the remaining vinaigrette until well coated. For best flavor, cover and refrigerate for at least 30 minutes to marinate.

Assemble the hummus bowls

  1. Spread the hummus in an even layer in bowls or on a serving platter. Top with the vinaigrette coated chicken. Scatter feta, cucumbers, tomatoes, olives and pickled onions on top. Drizzle with remaining vinaigrette. Serve with pita chips and optional garnishes.

Notes

  • For optimal flavor, marinate the chicken in the vinaigrette for at least 30 minutes before cooking.
  • To make this recipe vegan, substitute the feta cheese with crumbled vegan feta or nutritional yeast.
  • Store leftover hummus and chicken separately in airtight containers in the refrigerator for up to 4 days.
