Ingredients

  • 2 cups (300 ml) lentilles du Puy (French green lentils)
  • 1/4 cup (59 ml) olive oil
  • 3 stalks celery, diced
  • 1/2 yellow onion, minced
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 2 cups (300 ml) of diced potatoes
  • 4 cups (600 ml) chicken stock
  • 2 fresh Italian-spiced chicken sausages
  • Healthy pinch of dried or fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the lentils.
  2. In a large pot, warm most of the olive (reserve a bit to cook the sausages).
  3. Sweat the onions, celery, red pepper and garlic.
  4. Meanwhile, cook the sausages in a separate pan. When they are cooked through, remove, slice and set aside.
  5. Add the lentils, chicken stock, potatoes and sausages to the pot.
  6. Add spices (salt, pepper, rosemary).
  7. Let simmer for an hour.
  8. Add water or more chicken stock as needed until the preferred consistency is acquired.
