Ingredients
Scale
- 4-8 chicken breasts
- Juice of 2 lemons
- Black pepper, to taste
- Salt, to taste
- 3-4 tablespoons capers
- Fresh parsley, for garnish
Instructions
- Place the chicken breasts between two sheets of cling wrap and flatten them out using a rolling pin until they are about 1/4 inch thick.
- Preheat a grill or grill pan over medium-high heat.
- Grill the chicken for 2 minutes on each side, or until fully cooked and golden brown.
- While grilling, season each side of the chicken with lemon juice, salt, and black pepper.
- Once cooked, remove the chicken from the grill and sprinkle with capers.
- Garnish with fresh parsley before serving.
Notes
For best results, ensure the chicken breasts are evenly flattened to cook uniformly. Serve with a simple salad of arugula, feta cheese, and watermelon for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 2 days. You can substitute lime juice for lemon juice if preferred.
