Description

Ingredients

  • 4-8 chicken breasts
  • Juice of 2 lemons
  • Black pepper, to taste
  • Salt, to taste
  • 3-4 tablespoons capers
  • Fresh parsley, for garnish

Instructions

  1. Place the chicken breasts between two sheets of cling wrap and flatten them out using a rolling pin until they are about 1/4 inch thick.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Grill the chicken for 2 minutes on each side, or until fully cooked and golden brown.
  4. While grilling, season each side of the chicken with lemon juice, salt, and black pepper.
  5. Once cooked, remove the chicken from the grill and sprinkle with capers.
  6. Garnish with fresh parsley before serving.

Notes

For best results, ensure the chicken breasts are evenly flattened to cook uniformly. Serve with a simple salad of arugula, feta cheese, and watermelon for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 2 days. You can substitute lime juice for lemon juice if preferred.
