Description

- 3 tbsp oil
- 2 medium sized red onions, thinly sliced
- 1 tbsp (15 g) freshly grated ginger
- 1 1/2 tsp freshly ground cumin
- 1 tsp red cayenne pepper
- 4 cups (946 ml) of freshly chopped kale
- 2 tbsp (30 g) raisins
Instructions
- Heat the oil on medium-low heat (approximately 1 minute), then add the onions and cook until softened, curled, and golden brown (10-12 minutes).
- Remove about half of the onions using a slotted spoon.
- Add the ginger and cook for another minute.
- Add the cumin and cayenne pepper; mix well.
- Add the kale and stir until wilted.
- Stir in the raisins and cook until heated through.
- Serve hot or at room temperature.
Notes
- For deeper caramelization, cook the onions uncovered and be patient; it takes time to achieve that rich sweetness.
- If you don’t have fresh ginger, use 1 teaspoon of ground ginger instead, but the fresh ginger offers a superior flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; the flavors meld beautifully overnight.
