- 4 1/2 oz (135 g) bittersweet or semi-sweet chocolate (good quality)
- 8 large Medjool dates, pitted
- 3 tbsp (45 ml) brandy
- 3 tbsp (45 ml) water
- 1 tbsp (15 ml) vanilla paste
- 1/2 cup (120 ml) powdered sugar
Instructions
- Roughly chop the chocolate on a cutting board and set aside.
- Finely chop the dates and place them in either the top of a double boiler or in a heatproof bowl set over a small saucepan with an inch or two of simmering water.
- Add the brandy, water, and vanilla paste to the dates and stir occasionally until the mixture is warm and the dates are soft and starting to break down, about 5-7 minutes.
- Remove from heat and stir in the chopped chocolate until fully melted and the mixture is smooth.
- Let the mixture cool slightly, then refrigerate for about 1 hour, or until firm enough to handle.
- Once firm, use a tsp to scoop small amounts of the mixture and roll into balls.
- Roll each truffle in powdered sugar to coat.
- Store the truffles in an airtight container in the refrigerator until ready to serve.
