Description
Crispy, golden Indian-style fries seasoned with cumin and mustard seeds, garnished with peanuts and fresh cilantro for a spicy, flavorful twist.

- 1/2 lb (225 g) potatoes, peeled and cut into strips
- 1/2 tsp salt
- 1 tbsp ground roasted unsalted peanuts
- 2 tbsp (30 ml) vegetable oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 lime, cut into wedges
- Chopped fresh cilantro, for garnish
- 2 green chilies, chopped
Instructions
- Peel the potatoes and cut them into strips, similar to French fries.
- In a deep pan or skillet, heat 2 tbsp of vegetable oil over medium heat.
- Add 1 tsp of cumin seeds and 1 tsp of mustard seeds to the hot oil. Fry them until they start to pop and release their aroma, about 1 minute.
- Add the potato strips to the pan and sprinkle with 1/2 tsp of salt. Stir well to coat the potatoes with the spices.
- Add the chopped green chilies and continue to cook, stirring occasionally, for about 10-12 minutes, or until the potatoes are golden brown and crispy.
- Sprinkle 1 tbsp of ground roasted unsalted peanuts over the fries and toss to combine.
- Remove the fries from the pan and drain on paper towels if necessary.
- Serve hot, garnished with chopped fresh cilantro and lime wedges on the side.
Notes
- These fries are best enjoyed hot and fresh, straight from the pan.
- Serve them in a newspaper cone for an authentic street food experience.
- If you prefer less heat, reduce the amount of green chilies.
- Store any leftovers in an airtight container in the refrigerator and reheat in a skillet to regain crispiness.
