Description

- 1/2 pound potatoes, peeled and cut into strips
- 1/2 teaspoon salt
- 1 tablespoon ground roasted unsalted peanuts
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 lime, cut into wedges
- Chopped fresh cilantro, for garnish
- 2 green chilies, chopped
Instructions
- Peel the potatoes and cut them into strips, similar to French fries.
- In a deep pan or skillet, heat 2 tablespoons of vegetable oil over medium heat.
- Add 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds to the hot oil. Fry them until they start to pop and release their aroma, about 1 minute.
- Add the potato strips to the pan and sprinkle with 1/2 teaspoon of salt. Stir well to coat the potatoes with the spices.
- Add the chopped green chilies and continue to cook, stirring occasionally, for about 10-12 minutes, or until the potatoes are golden brown and crispy.
- Sprinkle 1 tablespoon of ground roasted unsalted peanuts over the fries and toss to combine.
- Remove the fries from the pan and drain on paper towels if necessary.
- Serve hot, garnished with chopped fresh cilantro and lime wedges on the side.
Notes
These fries are best enjoyed hot and fresh, straight from the pan. Serve them in a newspaper cone for an authentic street food experience. If you prefer less heat, reduce the amount of green chilies. Store any leftovers in an airtight container in the refrigerator and reheat in a skillet to regain crispiness.
