- 3 tbsp Coriander Seeds
- 1 1/2 tbsp Cumin Seeds
- 1 tbsp Fennel Seeds
- 1 inch Cinnamon
- 4 Cloves
- 2 Dry Red Chili
- 7-8 pieces Chicken Drumsticks
- 1 cups (237 ml) Thick Yoghurt
- 1 tbsp Crushed Ginger
- 1 tbsp Crushed Garlic
- 2 tbsp Indian Spice Blend
- 2 tbsp Oil
- Salt
- 1 tbsp Chaat Masala (optional)
Instructions
- Toast all spices in a pan over low heat until aromatic, being careful not to burn them.
- Transfer spices to a spice grinder and coarsely grind.
- In a ziploc bag, mix all marinade ingredients except oil. Refrigerate for a few hours or overnight.
- Arrange drumsticks on a greased, foil-lined baking sheet. Drizzle with oil and broil until golden brown, turning occasionally to ensure even browning.
- Brush with remaining marinade to keep moist and flavorful.
- Sprinkle with lemon juice and chaat masala. Serve warm.
Notes
- For deeper flavor, marinate the chicken for at least 6 hours, or preferably overnight.
- To prevent burning, use a thermometer to check the internal temperature of the chicken (it should reach 165°F).
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
