Festive gluten-free cookies dipped in matcha latte.
Perfect for a holiday gathering or a cozy night in.


Ingredients

  • 16 grams (0 lbs) Schar Gluten Free Honey Grams
  • 1 oz (30 gr) 99% Dark Chocolate
  • 1 oz (30 gr) Dairy Free White Chocolate
  • 1 handful Red Currants
  • 1 spring fresh Mint Leaves
  • 1 tbsp Puffed Millet
  • 0 oz (8 gr) Matcha Green Tea Powder
  • 7 oz (200 ml) full fat Coconut Milk (or 18 oz (500 ml) your favorite plant based milk)
  • 11 oz (300 ml) Water (to water down the full fat coconut milk)
  • 5 leaves fresh Basil
  • 10 leaves Mint
  • 1 tsp Vanilla Extract

Instructions

  1. Place your gluten-free cookies on a cutting board.
  2. Wash the currants and mint leaves and let them dry.
  3. Warm a small pan over the stove on minimum heat. Add the dark chocolate and stir until melted.
  4. Drizzle melted dark chocolate over the gluten-free cookies using a teaspoon.
  5. Repeat the process with white vegan chocolate in a clean pan, drizzling it over the cookies.
  6. While the chocolate is still warm, decorate the cookies with red currants, puffed millet, and mint leaves, pressing them onto the melted chocolate.
  7. For the Matcha Latte:
  8. Warm your dairy-free milk.
  9. Pour the warmed dairy-free milk and other Matcha Latte ingredients into a high-speed blender and blend until the leaves are completely dissolved.
  10. Pour the Matcha Latte into a cup.
  11. Dip the gluten-free Christmas cookies into the Matcha Latte.

Notes

  • To prevent the cookies from becoming soggy, allow the chocolate to fully set before dipping them in the matcha latte.
  • For a richer matcha flavor, use high-quality matcha powder and adjust the amount to your preference.
  • These cookies can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 2 weeks.
