Description
Strawberries, sugar, and lemon juice cooked low for two hours with no pectin and no shortcuts. The long cook concentrates the fruit into a deep ruby conserve that tastes more like strawberry than any quick-set jam.

Instructions
- In a large saucepan, combine strawberries, sugar, and lemon juice.
- Cook over medium heat, stirring frequently, until the mixture comes to a boil.
- Reduce heat and simmer for about 2 hours, stirring occasionally, until the conserve thickens.
- Remove from heat and let cool before transferring to jars.
Notes
Enjoy this conserve on multigrain toast with a Philadelphia spread for a delicious breakfast. It also makes a great topping for ice cream. Store in sterilized jars to keep it fresh longer. Adjust the sugar to taste if you prefer a sweeter conserve.
