Description

This Hippie Salad is a refreshing and quick no-cook meal, perfect for summer with its fresh peas, radishes, and spelt berries dressed in olive oil and lemon juice.


Ingredients

Scale
  • a handful of fresh Peas or 1/4 cup, shelled or sliced in the pod
  • 1/4 cup of thinly sliced French Radishes
  • about 1/4 to 1/2 finely sliced Garlic Scape (in lieu of Shallot) approx a tablespoon
  • 1 cup of cooked Spelt Berries

Dressing:

  • Scant amount Extra Virgin Olive oil 1-2 Tblsp to taste
  • Apple Cider Vinegar (Put down the Heinz and break out the good stuff) to taste
  • Squeeze of fresh Lemon
  • Chopped Fresh Dill 1-2 tsp
  • Salt & Pepper to taste


Instructions

  1. In a large bowl, combine 1 cup of cooked spelt berries with 1/4 cup of fresh peas, 1/4 cup of thinly sliced French radishes, and 1/4 to 1/2 of a finely sliced garlic scape.
  2. Drizzle with 1 tablespoon of olive oil and 1 tablespoon of lemon juice.
  3. Season with salt and pepper to taste.
  4. Toss everything together until well combined and serve immediately.

Notes

For a variation, try adding other seasonal vegetables like cucumbers or cherry tomatoes. This salad can be stored in the refrigerator for up to 2 days, but it’s best enjoyed fresh. If you don’t have spelt berries, you can substitute with quinoa or farro.
