- 14.5 oz (411 g) hearts of palm
- 1 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lime juice
- 1 large garlic clove
- 0.125 cups (30 ml) fresh cilantro
- zest of 0.5 lime
- sea salt
- freshly ground black pepper
Instructions
- Place garlic clove in a food processor and pulse several times.
- Add lime juice, zest, hearts of palm (drained), and olive oil; process until thoroughly combined.
- Add fresh cilantro leaves and pulse several times. Season with salt and pepper.
- Serve immediately (drizzle with olive oil for garnish) with chips or refrigerate and use within 2-3 days.
Notes
- For a smoother dip, add a tablespoon of water while processing.
- Substitute lemon juice for lime juice if needed, adjusting the amount to taste.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
