Description

This vibrant dip is incredibly easy to make and bursts with fresh flavor. Serve with chips or veggies for a healthy starter.


Ingredients

  • 14.5 oz (411 g) hearts of palm
  • 1 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lime juice
  • 1 large garlic clove
  • 0.125 cups (30 ml) fresh cilantro
  • zest of 0.5 lime
  • sea salt
  • freshly ground black pepper

Instructions

  1. Place garlic clove in a food processor and pulse several times.
  2. Add lime juice, zest, hearts of palm (drained), and olive oil; process until thoroughly combined.
  3. Add fresh cilantro leaves and pulse several times. Season with salt and pepper.
  4. Serve immediately (drizzle with olive oil for garnish) with chips or refrigerate and use within 2-3 days.

Notes

  • For a smoother dip, add a tablespoon of water while processing.
  • Substitute lemon juice for lime juice if needed, adjusting the amount to taste.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
