Description

These flavorful skewers feature firm tofu and colorful vegetables marinated in a tangy, spiced yogurt sauce. They are a fantastic vegetarian option for your next barbecue or a healthy weeknight meal.


Ingredients

  • 1 pack extra firm tofu (cut in small cubes)
  • 2 green bell pepper (cut in cubes)
  • 1 yellow bell pepper (cut in cubes)
  • 2 white onions (cut in cubes)
  • 1 cup (237ml) plain yogurt (whisked)
  • 1 teaspoon (5ml) garlic (minced)
  • 2 teaspoons (10ml) ginger (minced)
  • 2 teaspoons (10ml) complete seasoning
  • 2 teaspoons (10ml) paprika
  • 2 teaspoons (10ml) curry powder
  • salt to taste
  • 1/4 cup (59ml) olive oil
  • 12-15 bamboo skewers

Instructions

  1. In a mixing bowl, combine whisked yogurt with garlic, ginger, paprika, curry powder, salt, and 1 tablespoon (15 ml) of olive oil. Stir until combined.
  2. Gently add tofu cubes, cubed bell peppers, and onions to the yogurt mixture. Mix gently. Cover with cling wrap.
  3. Let the mixture marinate in the refrigerator for 2 hours or until ready to cook.
  4. Meanwhile, soak the bamboo skewers in water.
  5. Once ready to cook, arrange alternate layers of tofu, bell pepper, and onions on the skewers.
  6. Sprinkle some oil over the arranged skewers.
  7. Drizzle the grill pan with olive oil and grill the skewers until golden and crispy.
  8. Serve warm with your preferred beverage.

Notes

For best results, use extra firm tofu to maintain its shape on the grill. Pair these skewers with Santa Rita red wine for a delightful meal. If you can’t find Badia spice mix, substitute with your favorite spice blend. These skewers are perfect for summer gatherings and can be prepared ahead of time and refrigerated until ready to grill.
