- 1 pack extra firm tofu, cut into small cubes
- 2 green bell peppers, cut into cubes
- 1 yellow bell pepper, cut into cubes
- 2 white onions, cut into cubes
- 1 cup plain yogurt, whisked
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon paprika
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1 tablespoon olive oil
- Badia spice mix, to taste
Instructions
- In a mixing bowl, add the whisked yogurt. Stir in the garlic, ginger, paprika, curry powder, salt, and olive oil until well combined.
- Gently fold the tofu cubes into the yogurt mixture, ensuring each piece is well coated.
- Add the cubed green and yellow bell peppers and onions to the bowl, mixing until all vegetables are evenly covered with the marinade.
- Thread the tofu and vegetables onto skewers, alternating between tofu and vegetables for even cooking.
- Preheat the grill to medium-high heat.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the tofu is golden brown and the vegetables are tender.
- Sprinkle with Badia spice mix to taste before serving.
Notes
For best results, use extra firm tofu to maintain its shape on the grill. Pair these skewers with Santa Rita red wine for a delightful meal.
