Description

Take pizza night outdoors with this smoky grilled version featuring sweet peaches, salty prosciutto, and a creamy Alfredo base. It’s the ultimate summer comfort food.


Ingredients

  • Pizza Dough
  • Olive Oil for Brushing
  • 2 cups (473ml) Shredded Mozzarella Cheese
  • 1 cup (237ml) Caramelized Onions (see link above for recipe)
  • 1/2 cup (118ml) Reduced Fat Alfredo Sauce
  • 2 Peaches (grilled and sliced)
  • 10-12 Prosciutto Pieces (sliced very thin)
  • 1 cup (237ml) Arugula
  • Salt and Pepper for sprinkling

Instructions

  1. Preheat your grill to 550°F (288°C). Make sure the grill is very clean or use a grill cover.
  2. Roll pizza dough out into a circular or rectangular shape to medium thickness. Do not use thin crust as it will burn too easily.
  3. Place dough in the freezer for 15-30 minutes to firm up while you prepare the toppings. Bring all the toppings out to the grill with you before starting.
  4. Be sure to brush your grill well with olive oil.
  5. Brush one side of the pizza dough with olive oil and place that side down on the grill. The dough will puff up. Close the lid and cook for 1-2 minutes. The dough should start to set but should not change color.
  6. With a long spatula, carefully flip the pizza dough.
  7. Immediately brush the other side with olive oil, spread with Alfredo sauce and all toppings (mozzarella, caramelized onions, grilled peaches, and prosciutto), minus the arugula.
  8. Close the grill lid and cook until the cheese is melted and your crust is a golden brown color (about 3-4 minutes).
  9. Remove from the grill with a long spatula.
  10. Top with arugula, salt and pepper. Cut into slices and serve.

Notes

For best results, use a medium-thickness crust to avoid burning. Freeze the dough for 15 minutes before grilling to make it easier to handle. Ensure all toppings are ready before grilling the crust to prevent burning. Store any leftovers in the refrigerator and reheat on a grill or in an oven to retain crispiness.
