Description
These thinly sliced potato chips are marinated in a vibrant sesame ginger dressing, then grilled to perfection for a smoky, flavorful side dish.

- 4 potatoes (907 g) potatoes
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 lime (juiced)
- 1 clove (1/2 tsp) garlic clove
- dash cayenne pepper
- 1/2-1 tsp fresh ginger
- 1 tbsp sesame seeds (14 g) sesame seeds

Instructions
- Wash potatoes and slice them thinly using a mandolin.
- In a large bowl, combine sesame oil, soy sauce, lime juice, garlic, and a dash of cayenne pepper. Add the thinly sliced potatoes and toss to coat. Marinate for 30 minutes.
- Place the potatoes on a large piece of aluminum foil. Sprinkle with 1 tablespoon of sesame seeds and ginger. Add another dash of cayenne pepper if desired. Seal the foil.
- Place the foil packet on a grill over high heat for 20 minutes.
- Carefully open the foil packet to avoid burns from steam.
- Place the potatoes in a serving bowl and sprinkle with sesame seeds.
Notes
- For extra-thin slices, use a mandoline slicer and wear a food glove to prevent cuts.
- If you don’t have fresh ginger, you can substitute 1/2 teaspoon of ground ginger.
- These chips are best served immediately after grilling, but leftovers can be stored in an airtight container at room temperature for up to 1 day.
