Description

These thinly sliced potato chips are marinated in a vibrant sesame ginger dressing, then grilled to perfection for a smoky, flavorful side dish.


Ingredients

  • 4 potatoes (907 g) potatoes
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 lime (juiced)
  • 1 clove (1/2 tsp) garlic clove
  • dash cayenne pepper
  • 1/2-1 tsp fresh ginger
  • 1 tbsp sesame seeds (14 g) sesame seeds
  • cilantro
  • sesame seeds

Instructions

  1. Wash potatoes and slice them thinly using a mandolin.
  2. In a large bowl, combine sesame oil, soy sauce, lime juice, garlic, and a dash of cayenne pepper. Add the thinly sliced potatoes and toss to coat. Marinate for 30 minutes.
  3. Place the potatoes on a large piece of aluminum foil. Sprinkle with 1 tablespoon of sesame seeds and ginger. Add another dash of cayenne pepper if desired. Seal the foil.
  4. Place the foil packet on a grill over high heat for 20 minutes.
  5. Carefully open the foil packet to avoid burns from steam.
  6. Place the potatoes in a serving bowl and sprinkle with sesame seeds.

Notes

  • For extra-thin slices, use a mandoline slicer and wear a food glove to prevent cuts.
  • If you don’t have fresh ginger, you can substitute 1/2 teaspoon of ground ginger.
  • These chips are best served immediately after grilling, but leftovers can be stored in an airtight container at room temperature for up to 1 day.
