- 2 tablespoons unsalted organic butter
- 2 slices oat nut bread or other sliced bread for toasting
- 1/4 cup sun dried tomatoes, coarsely chopped
- 1/4 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
Instructions
- Heat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- Place one slice of bread butter-side-down onto the skillet.
- Top with sun dried tomatoes, feta, and mozzarella.
- Place the other slice of bread butter-side-up on top.
- Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from skillet, slice in half, and serve immediately.
Notes
For a more robust flavor, try adding a pinch of Italian seasoning or fresh basil leaves. This sandwich is best served immediately while the cheese is hot and gooey. Store any leftover ingredients separately and assemble fresh sandwiches as needed.
