These green pea cookies are a unique and delightful treat, combining the subtle sweetness of icing sugar with the earthy flavor of green pea powder.

- 260g Green pea powder
- 160g Icing sugar
- 1/2 tsp Salt
- 340g Self-raising flour
- 200 ml Vegetable oil (I used peanut oil)
- 1 egg yolk
- 1/2 tsp water for glazing
Instructions
- Sift the self-raising flour and salt together into a large mixing bowl.
- Sift in the icing sugar and add the green pea powder to the bowl.
- Mix all the dry ingredients thoroughly until well combined.
- Gradually add the vegetable oil, mixing slowly until the dough comes together and does not stick to your hands.
- Preheat your oven to 170°C (340°F).
- Shape the dough into small balls, about the size of a marble, and place them on a baking tray lined with parchment paper.
- In a small bowl, mix the egg yolk with 1/2 tsp of water to create an egg wash.
- Brush the top of each cookie with the egg wash for a glossy finish.
- Bake the cookies in the preheated oven for 20-25 minutes, or until they are lightly golden brown.
- Allow the cookies to cool on a wire rack before serving.
Notes
Store the cookies in an airtight container to keep them fresh for up to a week. You can substitute peanut oil with any other vegetable oil if desired. Ensure the dough is not too sticky before shaping into balls; adjust the oil quantity if necessary.
