- 3 cans butter beans or great northern beans
- 3 tbsp Greek extra virgin olive oil, plus more to serve
- 1 Spanish onion, finely chopped
- 2 garlic cloves, finely chopped
- 2 tbsp tomato purée
- 2 cups (480 ml) ripe tomatoes, chopped
- Salt and pepper to taste
- Bread slices for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large frying pan, heat the olive oil over medium heat.
- Add the finely chopped garlic and cook for 1-2 minutes until the garlic is soft and fragrant.
- Add the finely chopped Spanish onion to the pan, season with a dash of salt and pepper, and cook for 5-10 minutes, stirring occasionally, until the onions are soft and translucent.
- Stir in the tomato purée and chopped ripe tomatoes. Cook for another 5 minutes until the tomatoes are soft and the mixture is well combined.
- Gently fold in the butter beans or great northern beans, ensuring they are well coated with the tomato mixture. Cook for an additional 5 minutes until heated through.
- Toast the bread slices in the oven for about 5 minutes or until they are golden brown and crispy.
- Serve the bean mixture on top of the toasted bread slices, drizzled with a little more olive oil if desired.
