- 3 cans butter beans or great northern beans
- 3 tablespoons Greek extra virgin olive oil, plus more to serve
- 1 Spanish onion, finely chopped
- 2 garlic cloves, finely chopped
- 2 tablespoons tomato purée
- 2 cups ripe tomatoes, chopped
- Salt and pepper to taste
- Bread slices for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large frying pan, heat the olive oil over medium heat.
- Add the finely chopped garlic and cook for 1-2 minutes until the garlic is soft and fragrant.
- Add the finely chopped Spanish onion to the pan, season with a dash of salt and pepper, and cook for 5-10 minutes, stirring occasionally, until the onions are soft and translucent.
- Stir in the tomato purée and chopped ripe tomatoes. Cook for another 5 minutes until the tomatoes are soft and the mixture is well combined.
- Gently fold in the butter beans or great northern beans, ensuring they are well coated with the tomato mixture. Cook for an additional 5 minutes until heated through.
- Toast the bread slices in the oven for about 5 minutes or until they are golden brown and crispy.
- Serve the bean mixture on top of the toasted bread slices, drizzled with a little more olive oil if desired.
Notes
You can use either butter beans or great northern beans, depending on your preference. This dish is perfect for dinner parties or social gatherings. Serve immediately for the best texture. If you prefer a smoother texture, mash some of the beans before serving.
