Description

This vibrant, grain-free pasta dish comes together in minutes. Earthy lentil and pea pasta is tossed in a simple sauce of olive oil infused with crispy sage.


Ingredients

  • 80 grams (2.8 ounces) Green Pea Pasta
  • 80 grams (2.8 ounces) Red Lentil Pasta
  • 100 grams (3.5 ounces) Rice Mozzarella
  • 2 tablespoons (30 milliliters) Extra Virgin Olive Oil
  • 4 leaves of Sage
  • 1 1/2 teaspoons (7.4 milliliters) dried Italian herbs
  • Himalayan Salt (to taste)

Instructions

  1. Cook your pasta in a large pot of water for about 7 minutes (cooking time may change depending on the type of pasta). If you want to keep the colors separate for a better presentation, you’ll need to cook the two colors in two different pots.
  2. While the pasta is cooking, wash the sage and cut it into pieces. In a medium sized saucepan, heat up the olive oil with the sage until the leaves get dark green and crispy.
  3. Strain your grain free pasta and toss it in the saucepan with the olive oil and sage (do it one color at a time if you care about keeping the colors separate). While you mix it, sprinkle some dried Italian herbs and salt on it.
  4. Transfer the pasta to a plate, top it with some dairy free mozzarella cheese, and drizzle a bit of olive oil on top.
  5. Garnish your dish with some fresh basil and enjoy your grain free Pasta Tricolore!
