- 3/4 cup almond butter
- 1/2 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 cup dark chocolate chips (optional)
- 1/2 tsp coconut oil (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine 3/4 cup almond butter, 1/2 cup coconut sugar, 1 egg, 1 tsp vanilla extract, and 1/2 tsp baking soda. Mix until well combined.
- Using a spoon or cookie scoop, place spoonfuls of the batter onto a greased cookie sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the centers are set.
- If using chocolate, melt 1/2 cup dark chocolate chips with 1/2 tsp coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Drizzle the melted chocolate over the cooled cookies and allow it to set before serving.
Notes
These cookies are gluten-free and paleo-friendly, making them perfect for those with dietary restrictions. They can be enjoyed with or without the chocolate drizzle, depending on your preference. Store in an airtight container for up to a week. For a nut-free version, substitute almond butter with sunflower seed butter.
